Ok, here goes...

some-html: "... some html with a <tag> set of tags
</tag> and some trailing text..."

Q. How can I find and replace the text between the
tags, while leaving the tags intact, so it ends up
like this...
some-html: "... some html with a <tag> replaced text
</tag> and some trailing text..."
?

Parsed seemed like the way to go, but ?

Replace seemed a bit clunky and added tag brackets
where they shouldn't be... just seems like the wrong
approach.
