Looks like the ability to change this setting was only added in the new version of Postorius that was released last month: <https://gitlab.com/mailman/postorius/-/issues/514>.
I am hoping we will have time to upgrade all of Mailman next month: <https://phabricator.wikimedia.org/T286217>. In the meantime setting up a mail filter is your best option.
