Scott Lowe's Mastering VMware vSphere 5.5 (Sybex) I've talked with Scott a 
couple of times at VMworld and sat in on his sessions. He knows his stuff, 
period.
Brian Atkinson's VCP5-DCV (also Sybex) also a good one.

That was more of a joke than anything - I haven't looked at a VMware book for 
several years, and things have changed more than a bit in the interim.

But, I would scour oreilly.com - any title relevant to your experience and 
goals by O'Reilly and Associates, or perhaps by Sybex, should provide what you 
need.
