That sounds about right for us as well.  It would be nice if there were SP's 
for Windows 7 (post SP1) and Office 2013 (post SP1).

This is what I have seen:

PXE Boot:
Just OS (no apps, image contains updates) = 15 - 20 mins
OS (including updates), standard software installs (Adobe Reader, Flash, 
Shockwave, Java, Kace, Office 2010, SEP, Enterprose Vault), and run WSUS post 
install = 2.5 - 3.5 hours. Depending on how many updates are being pulled from 
WSUS.

Automated thumb drive:
Boot to thumb drive and walk away - FULL install of everything = 30 mins.

Language packs take a little longer.

thin Win7 image takes?  Just a ballpark figure using automated MDT task 
sequence..
