That is exactly how we did our Office 2013 deployment.

If you are using 2012 you can set an Installation deadline.  I believe this 
makes the application show up in Software Center but will not install on its 
own until the deadline is reached.  At least that is the case with software 
updates.  I have not done this myself but thanks for the idea on how I should 
roll out Office 2013.  I didn't even think of that.  Be sure to change the time 
based option to client local time if you want to automatic install to kick off 
after hours.  By default it is set to UTC.  I did not catch that once and had 
software uninstall out of a computer lab prior to the end of the day.

Does this not exist as it does with software updates?

I would like to make an application available for a week or so and then make it 
mandatory after that time is up. Not sure if I could make two deployments to 
accomplish this, one available, other required.
