As you said, mostly covered by Windows ports. I build and use several Linux video processing programs like FFmpeg, Handbrake, MKVtools and MediaInfo. Again, there are Windows binaries but for a technical environment as you indicate, you could perhaps demonstrate compilation and execution in a shell from source if that is part of the curriculum.
