I'd test this in a lab first however, removing WSUS and the SUP doesn't remove 
the things you mention wanting to keep. For that reason I'd try removing the 
SUP, upgrading then adding it back.

Morning All,

We will soon be upgrading from 2012 R2 SP1 to 1511, and in the process moving 
from our 2008 R2 WSUS Software Update Point, to a 2012 WSUS Software Update 
Point.

Has anyone any experience with this?

What should be the correct process?

Upgrade to 1511, Add the new SUP, Sync, Remove the old SUP?
Or
Remove the old SUP, Upgrade to 1511, Add the new SUP
Or even
Upgrade to 1511, Remove the old SUP and then Add the new?

My main concern is keeping all the Software Update information, Packages, ADR's 
etc intact and unaffected during the process.
