Why not set the proper browser in your Enterprise Mode site list? That wont solve it for sites you aren't managing, but for sites you are, just tell it to open in IE11.

In our bare metal image, we set IE11 as the default browser, however this gets wiped away and reset back to edge when I seal the image. Is there a best practice available that accomplishes setting IE as the default browser in Windows 10, group policy or manually setting within the image? So far, I haven't found a simple solution that would disable Edge and set IE as the default. Any help is greatly appreciated.
