I have used the PSADT for about 10-12 deployments so far and have done a mix of applications/packages. I looked at shortening our re-eval setting to 2 hours but decided against it. Instead, I found an extension to the toolkit in the forums on their site that uses scheduled tasks on the local machine and modified it to re-prompt the user after two hours should they hit defer/postpone. When they postpone, it creates a scheduled task that runs a command line 2 hours later that simulates running it manually from Software Center and re-runs the application. That has worked great so far.
