Its just DC
controllers dont have the feature nor are there
separate regulators at this time.

How exactly is an AC motor safer?


If you directly connect the batteries to the motor then the motor will not
turn. This is a key safety advantage, as controllers can do this when they
fail.

C. Do most electric motors just not need a transmission?


It's my opinion that a transmission is not a good idea for a motorcycle,
because the following can offer the same advantages for less
weight/size/losses/complexity:

1. Go to a higher system voltage

2. Get a larger more powerful motor, or use more than one motor

3. Do both 1 and 2 (kind of like what I did with my project)

However, a transmission might be a good idea for keeping costs down, and
still getting good performance.
