However I remember with WSS 2.0 you could actually make changes to an existing Site Def and certain changes would come through to sites already based on those definitions.
Especially items like new fields that are added at the end of a List definition or changes to an ASPX page that forms part of the site def, I expect this is still the same with MOSS unless someone has experienced otherwise.
