Yeah it sounds like you deleted some of the required columns in the task list. Re-create the task list, re-associate the workflow, do not delete any columns, and it should work fine.

When I try to run the workflow, I set the workflow is assigned to me. I got the task reminder email, and then open the "Task Edit" page, then click "Completed Task" button, and get the error message "This task is currently locked by a running workflow and cannot be edited".
