Just a side question when creating custom content types for a list. Is
there any way to dispose of the inherited columns apart from just hiding
them? I refer specifically to the Item content type and the Title
column, where I would like change the column's type or just remove it
completely.

The recommended way is to use a feature to apply the content types to
existing sites.  Martin Kearn has an example feature that does just what
you want (using the Dublin Core content type) here:

Afternoon all

I've recently added a couple of content types to our site to enable
creating excel / powerpoint docs via the 'new' menu in document
libraries.

Is there a way to force these changes across all existing document
libraries?

(Bear in mind that you need to change "allow management of content
types" and then add the new content type before it appears)

Any help would be appreciated.
