Actually, what you could probably do if you wanted to get tricky, would be to edit the javascript (or perhaps change the list template to use a new set of JS), such that it performs a client side script method call to a web service hosted under the same web application, which looks up the current item that you clicked, and performs the same increment on the column as mentioned below - but we're getting very hacky, and maintenance would be a concern. But it's just ASP.NET, so there's always a way around these things.

Once you have the entry point, you can write some code against the API which simply grabs the edited list item, takes the current value out of the custom field (column) and increments it, and shoves it back in.
