I'm afraid I have to agree with Clayton. There doesn't seem to be an easy way to access the Name field associated with the Person or Group column within the email action, or any other action for that matter.

Then in your workflow use the Calculated column instead. As for displaying the users Fullname instead of their account name....I am not sure.
