When running as a virtual machine you must install the toolbox for that software to get higher resolutions, see the bottom of live.osgeo.org for details.
The final ISO as in Version 3 when run directly on a computer (boot from disk) has a much higher default resolution auto-detected from the monitor. As for the keyboard layout, alternate layouts are available at the login screen, and as a finishing touch which unfortunately must be done by hand we have been adding a keyboard switcher to the panel of the final product. Try out Version 3 to see what I'm talking about.
