It's usually better to 'dig in the code' before asking questions :-) One of the benefits of open source is that the code is right there in front of you.

I noticed that the class FileSink is used in testMP3Receiver.cpp,
What format FileSink puts the RTP payload into the file, mp3, wav, or
others,

A "FileSink" writes its input data to a file, without modification.
