When I sold my last boat post 9-11, I informed the IL state authorities and returned the original USCG doc to the NVDC.

Per the IL state authorities, I was required to notified the new owner that there was a 30 day grace period from the date of sale until he was required to have the boat registered. (I know the owner failed to do that. His thought was, the boat is on the hard and I will do that before next season. How do I know this? Because he called me, asking me to to reissue the bill of sale so that it would show that he was within 30 days.)

So, the only hassle I see with using the grace period is the documents that Canada might need to verify ownership.

If it was me, I would query really specifically the Canadians at the entry point I was planning to use to tell me exactly what they are looking for. Keep good notes, get the peoples' names, and ask the questions 3 times in different ways to ensure the answer remains the same.

I would also do the same at the departure point in the US.

I would do this all in person. I know. PITA. Seems like a small price to pay for a smooth exit and entry.

Then, go get the boat. Keep a copy of the registration papers and doc papers with you, have a copy of the state rules about how long the grace period is, and then make sure the boat is leaving the USA before the grace period expires

You might also rely on a customs broker to help you with this process but that could be overkill.
