Go to Office Debit or Staples and prepare to be overwhelmed - there are tons of 
them. Brother offers two that will operate off Wi Fi or Ethernet. Canon's have 
gotten some better reviews than HP. Study ink consumption as that is where the 
manufacturers screw you. The more individual color tanks the better and usually 
results in lower cost.

Anecdotally, someone said that HP makes a relatively waterproof ink and paper - 
I hope that is true. Some HP's are thermal inkjet all-in-ones. Perhaps their 
inks are less susceptable to moisture.

  The scanner is going to be the tough part of that one.  They have some small 
feed type scanners but then you are limited to what you can scan.  

   

  Your best bet is to look for a portable office unit that is meant for laptop 
users.  They are going to be expensive though.
