For a conventional head I recommend the Wilcox Crittenden "Skipper".  It is
solid bronze and well built.  New it probably retails for about $1000 but
you can find them used for much less.  The main part that wears out is
where the end of the operating shaft opposite to the pumping handle fits
into the main body casting.  Mine is loose, and has been for years.  I
imagine some day I will have to drill out the two holes where the shaft
fits and bush them with bronze bushings.  Using this head will require
using a holding tank in most places.  If you go this route I suggest a
large holding tank, at least 30 gallons.

A new option is the composting head.  This head has separate holes for the
poop and the pee.  The pee is collected in a container for disposal ashore.
It is legal to pee over the side, but illegal to pee into a container and
then dump the container overboard.  The poop goes into a chamber where it
is mixed with a inert media such as choir or peat moss where the bacteria
eat everything they can then die.  There is a small vent fan that runs
continuously to help remove moisture and odor.

Another option is the electric incinerating head but I am told they stink
fiercely when operated.
