Thanks, I've already done that command. Which showed me 2,500 lines of stuff from today, which I am not very equipped to decipher. But all of which seemed to relate to the latest startup rather than shutdowns from the previous day and before. But I shall try again and see if I can get any data from today's freezes on shutdown.
In terms of broader troubleshooting best practice, I feel I need to keep a diary of noteable system performance parameters and also of what I've installed and changed. e.g. Of the top of my head, from the beginning, it was roughly 15 seconds to login screen, and then 15 seconds more to show the desktop screen. Shutdown was around 3 seconds. Now shutdown is frozen, and I think startup became slower as well. In terms of recent events since the original good performance, installation of both ProtonVPN and pCloud come to mind. So I could try killing those before shutting down - CLI commands are suggested by internet search results.
