There is a description in the FAQ:

 Q: How do I change the note an instrument plays in the Beat/Bass Editor?
 A: Click on the intrument button on the track. There’s a blue bar
just above the keyboard at  the  bottom, an orange square indicates
the key that is played. Click on the blue bar to change the note.

If I'm correct, the mentioned bar is now brown, and it is that green
square on it, right? If so - doing an attempt to change the note
_never_ gave expected result, I mean: it never replaced the sound in
the beat with the one generated by the "piano key" placed directly
under green square. The strange thing is, that it seems, the octaves
are going opposite direction for the (formerly blue) bar, when
compared to "virtual keyboard" directly below this.
