Notice the yellow/orange area at the start of the middle parts (or clips ;).
Often there is a handle you can grab on the part/clip to drag how long
the fade should be.

These fade-ins are quite extreme. I cut and rearrange audio quite
often and I would probably mostly use fade-ins and outs that are just
a few ms long to counter clicks (which often happen when you make
sudden cuts in audio).
