I am pretty sure this has nothing to do with the builder because
{{org.apache.logging.log4j.core.appender.ConsoleAppender.Builder.build()}}
calls {{getOrCreateLayout()}} and I get the default pattern layout with this
config file. This has to do with the set up...
This works:

<AsyncRoot level="info">
<AppenderRef ref="myConsole" />
</AsyncRoot>
