There is no way to tell a receiver to use $today as part of the fileURL. Not a bad idea, but not supported. You'd need to modify the chainsaw config file or symlink the log file to a fixed file name.
If you provide a few sample events I can give you the logFormat..(multiple lines in log msgs shouldn't be a problem).
