The file appender will only append to a log file if it is specified in the config. Don't specify it in the config and it won't append. Of course, this means on application restart, not for each log statement. I can't imagine why one would want to overwrite for each log statement, but I just wanted to point that out to make sure the two situations weren't confused in the conversation.
