I'm now up to three out of four students with this problem were using laptops with trackpads. Haven't heard back from the fourth. Definitely seems to be a factor in what is happening here. I know the most recent was drop down questions (option response - matching) type questions and I believe that slight movement of a finger on a trackpad can change the answer of a recent drop down selection... I'm not sure how that results in a double submission though.
