The LPI posts lists of the official exam »objectives« on their web site. These tell you what candidates are supposed to know in order to pass the exams. The LPI is not in the business of mandating course schedules and »official« books. There is a programme called LPI-ATM which certifies that training materials cover all the objectives, but which does not imply a recommendation (other than that materials that do cover all the objectives are presumably superior to those that don't). As course schedules go, these would naturally depend on the participants, their previous exposure to Linux, and what they would be willing to invest. We have found that chopping LPIC-1 up into four three-day modules (at six-to-eight week intervals, for practicing in between) with an extra three-day exam prep workshop before the exams works for most of our customers, but your mileage may vary.
