Considering the increasing prevalence of SAN in day to day enterprise, I think not having SAN would stand out. Awareness of AoE, FCoE, and iSCSI, and knowledge of at least OpeniSCSI initiation configuration basics, I think is needed. Target administration with LIO and tgt could be part of an LPIC 3 exam, or perhaps an awareness level in LPIC 2.
