If you only use your custom management package, you don't need Gnome.
Gnome is a great system, and I use it a lot, but it is not well suited
for a single-purpose system. It uses a lot of memory, requires several
proceses, and uses a fair amount of CPU time.
A simpler window manager would be better suited for a single-purpose
system. Many on the list have mentioned IceWM, although I haven't tried
it.
Regarding your original question: the key bindings are handled by the
Window Manager, not directly by Gnome. Gnome will work with many
different Window Managers; the standard one in Red Hat 7.2 is Sawfish.
If you sign directly into the server, you can use Ctrl-Esc to bring up
the main Gnome menu, go to Programs, Settings, Sawfish Window Manager,
Shortcuts. This will let you edit key bindings.
To install your changes for all users, copy ~/.sawfish/custom to
/home/*/.sawfish/custom.
