Maybe I don't understand your question, but it sounds like you
want to have the server boot from one kernel, and the workstations
to boot from a different kernel ?  If that's the case, then
YES. That is how it works.  The workstation kernel has NOTHING
to do with the server kernel.  In fact, the server doesn't even
have to be Linux. or a x86 compatible machine.

The workstation will grab kernels from /tftpboot/lts, and mount
the /opt/ltsp/i386 directory as the root filesystem.  This has
nothing to do with whatever is  running on the server.
And, for the workstations, you can have as many kernels as you
want.  Just set the proper 'filename' in the /etc/dhcpd.conf file
for each workstation.

As for X servers, again, same thing.  The Xserver that you
install for the workstations doesn't have anything to do with
your video card on the server.  In fact, you don't even need to
run X on the server.

And, we have all of the X336 Xservers available as separate
packages, so pick the one you want, and set the XSERVER paramter
in lts.conf.
