Frederik, Your understanding is correct but your interpretation of the documentation is off.
You are correct that if one Evolution (or whatever) process dies, it will not take down the rest. However, what the documentation is saying is that if a process runs away, it will consume system resources to a point where everything else running on the server will become unresponsive. If the process runs away using Local apps, only that one workstation is affected. A process can run away for a number of reasons but my experience is that with LTSP it is usually cause by the process becoming disconnected with the display... usually when a program crashes (can you say Netscape 4.7?) or a user kills X with CTRL-ALT-BACKSPACE.
