ltsp is pretty flexible as to how you spread services across one or more boxes. I'd recommend you load everything onto your intended server just to start with; get it working and then play with the config files and move services around.
For an example of a home network - ours uses a dedicated Netgear box as a firewall/switch; the one decent spec computer is left permanently switched on in a cupboard (no monitor, no keyboard...) and everyone uses second hand ex-corporate Dell P133's as diskless workstations on their desks - see http://uk.homelinux.org for a description.
