Brendan,
   First, I'd suggest grabbing OpenOffice (www.openoffice.org) or buying
the newer version of StarOffice. The older Star Office implementation
was very clunky and your users probably will not be all that happy with
the interface.

   To answer your question, you will want to do a network install as
root (which defaults to something like /usr/local/bin/office5?) then do
an install as each user which sets up some user-specific files (i.e.
preferences) in each users $HOME.
