If they have a laptop, that would imply a hard drive. If you are having everyone in the ogranization use Linux (via LTSP), then simply load the complete Linux OS (Redhat, Suse, Mandrake, whatever you are using) on the laptops. When the laptops are connected remotely to the server, mount the appropriate mount points as if the user was in the office.
