There's been a fair amount of recent discussion about IPSEC and other security issues. IPSEC probably makes this thought redundant, but, in case it proves to be of any use, I thought I ought to mention that (outside the context of LTSP) I've just started playing with lufs http://lufs.sourceforge.net/lufs/ which allows (amongst other things) remote filesystems to be mounted via ssh. My first impressions are that it is very good, and perhaps it might have a part to play in providing an alternative to NFS in LTSP.
