to my opinion it is not a ltsp feature...

At the end of the ltsp boot, the ltsp client comes to a XDM session
where users can login into a XDM server, getting a full Desktop.

So you have to customize a KDE (or gnome or otherone) desktop in order to 
hide or give some aplication you want.
it is a Desktop, customization problem.
