I have had a similar problem twice. The most recent one was that I switched to the 2.6 kernel on the server and some of the clients simply refused to use NFS, failing at pivot_root. The workaround was reverting back to the 2.4 kernel. What kernel is your server running? I had such an issue once before: clients behind a certain switch hanged on pivot_root but other ones connected to a different switch worked correctly.
