I ran into some similar problems with some Dual Athlon boards a while ago...

this is what i discovered....
- the onboard sound was fine with a single cpu, but caused instability with 2cpus
- i underclocked the motherboards cpu's , and the board stayed stable for months
- when i replaced the regular ram, with registered ecc, it stayed stable at normal clock speeds and has been fine ever since

I am using Gentoo linux stable version

My server:

MSI Dual Athlon Mb
Dual Athlon 2000+
1Gb NONE ECC memory (going to test it thuesday night with memtest86) in
two blocks, and proberly going to change to one 1Gb ECC module instead

1Gbit SMC 32bit PCI NIC
64bit PCI Symbios Logic 53c1030 Ultra SCSI 320 controller with
2x36GB IBM SCSI320 disks
the disks are using id number 2 and 4, the controller number 7

My /home partition is mounted on another server using nfs

The server is shutting down at 22:15 and booting up again at 08:00 in
the morning, no one is using it so try to save some power...

Could it be something with my hardware drives, memory ?? the room temp.
is around 30 Celcius
