Just wanna share my experience, I am right now using XFCE 4.2 with kiosk mode. Even though I never use LTSP in a large computing environment YET like schools lab for instance, so far it works great. Users cannot mess up the UI and can run things that are on their screen Firefox and OpenOffice.org. XFCE 4.2 config file is also easy to configure.

The easy way is sticking to Ice and destroying the menu except for the Logout menus and a Firefox command. Other Window Managers could do well; I believe that XFCE has a Kiosk mode that would suit you well, but I've never used it so I'm not certain.
