Well, as far as I know, PDAs have their own Linux onboard (embedded or so), Zaurus had one at least. If that's the case, you might log in on the server just by using X itself. I'm doing that every day here in the office, logging in to the server from my office computer which has an older Linux itself:

X -query IP-ADDRESS-OF-SERVER :1

where 1 is the number of the (additional) screen on your PDA. On my desktop, I can switch screens by pressing Alt+Ctrl+F7 or F8 or F9, for screen 0, 1, 2 etc.

Otherwise, if that is not possible, you would need to

1. load the LTSP kernel via network on to the PDA (can they do a network boot? Or do they have a USB slot where one could make that with a USB stick like with a floppy?)
2. have a screen driver or VESA graphics for it
