We've seen that problem before as well. We use GDM to manage logins and I found messages on the server (in /var/log/messages) about GDM not receiving responses (it's own ping type algorithm) from that client. Then GDM would restart X, just like the behavior you're seeing. So check you server logs and see if you can find any info there. There's also a GDM setting about how long it's willing to wait for a response from the client before kicking it. It's called PingIntervalSeconds and is set in /etc/gdm/gdm.conf on my server. Raising that number significantly higher might help.

We decided that the problem was bad network hardware. A flakey ethernet card/chip, cable, or switch port will give you fits in a thin client environment.
