In my opinion SuSE9.3/10 is an EXCELLENT choice for LTSP in an environment like the one you describe. We've setup 10+ schools until now using SuSE and LTSP. With SuSE you get a very well known environment with a very broad base of users worldwide. When setting up LTSP, look out for bandwidth use. Streaming video and sound is diffifult and so forth.
