Thank you to Al and Jean-Michel for your replies.

I'm getting fairly close with the following scenario:

Attaching the printer to the thin client's parallel port.
Setting all thin clients to have the Jet Direct server via the
      PRINTER_0_TYPE     = P
      PRINTER_0_DEVICE   = /dev/lp0
Setting up a default print queue in Cups on the server that points to the
thin client that has the printer attached
Using lp5250d (this is a binary that is included in the project at
http://tn5250.sf.net/) with the following command:
      lp5250d env.DEVNAME=P2 env.IBMMFRTYPMDL=*IBM42011 outputcommand="cat
| lpr -l" 10.99.98.1
where 10.99.98.1 is my AS/400.

The output in this scenario is very close, but I have a few extra
characters printing on the output that I'm guessing are control chars that
didn't get understood.  I'm going to try some other models as well.  If
anyone has any advice on improvements over the raw print queue in the lpr
-l command I'd gladly entertain them as well.

I'm also trying *OKI321IBM  as my MFRTYPMDL.

Both of them print extra characters, and I'm not sure what to do about it.
Right now though it seems like a question for either a Cups or lp5250
mailing list.  Thanks again for your help guys.  If I do happen to find a
definitive answer I'll add information to the wiki.
