That's exactly what I wanted to do - limit a single app to say 75% of ram.

I agree, but frankly said, it would be too naive for us to expect this.
Even when most of the applications behaved nicely, there still will be
at least one doing something nasty - and we and the Xorg developers must
be prepared to handle this situation.
