Here is one in finnish, but you can read all conf-files, they are usefull. http://www.arkki.info/howto/Wiki/LTSP-Mantykangas/ Two servers, 113 thin clients, /home via nfs (3th machine). http://wiki.ubuntu-fi.org/Ubuntu_6.06_LTSP42 Next summer I will upgrade that system to Ubuntu 8.04 (LTSP5), but I think (and hope) there is no differences with dhcp-servers.
