Seems to be a problem of squid.conf:

all three had the same entry:

#Default:
# cache_access_log /var/log/squid/access.log

I deleted the # in the line with access.log, restarted squid
an the access .log was there again.

But I don't comprehend, why the other two weren't conflicted.
