The screen scripts that control this sort of thing are located in
/opt/ltsp/i386/usr/share/ltsp/screen.d

I'm not exactly sure how to do what you're asking, but I'd start by
copying the rdesktop script to something like "rdesktop.menu" and edit
that.  Then put in lts.conf "SCREEN_07 = rdesktop.menu"
