The simplest documentation is the Ubuntu wiki. Of course, add your own
content to improve it.

8.04 seems a bit old, I think you may find that users may have
difficulty with the usability.

10.10 x86 is possible on a server that you describe, something with
dual cores/threads is really a necessity. For thin clients, think
about getting systems that are PXE boot capable and have 128MB or more
of RAM.

I've found that failure to boot the image is usually related to DHCP
problems. In fact, I found that on some versions of isc-dhcpd3 on
Debian the thin client would get it's initial boot image fine, but the
DHCP server would ignore the _second_ DHCP request that comes from the
thin clients (from the running Linux, not the PXE BIOS). The 1st DHCP
request sends the path to the boot image, the second request sends the
root filesystem information so that the kernel can load the thin
client's root fs. If the 2nd step fails, the symptoms are that the
thin client gets to the Ubuntu load screen but just hangs there
indefinitely.
