You just install new desktop and start to use it in thin client, no need to update chroot for that. I think it is little bit confusing now a days in ubuntu (very rapid cycle, on per 6 month)what package/name is right one: ubuntu, ubuntu-2d, gnome, gnome3, gnome-faalbasck, gnome-classic etc. But you really should use for LTSP Edu/X/L/Ubuntu's LTS-version (6.06, 8.04, 10.04, 12.40 etc).
